Back To School Wafer Cookie Pencils

These cookies are great for a special treat the first day of school or any other day of the school year! If you want to add some extra fun to the school day and bring a smile to your child’s face then you’ll want to try these out. They are so simple to make, you only need 3 ingredients. Plus, they don’t take a lot of time to make either. Simple, fast and cute, now that is my style!

Ingredients:

1.) Wafer Cookies - You can use vanilla, strawberry, or chocolate. I used all 3!

2.) White, vanilla flavored, melting chocolate. (You’ll also want some pink or red food dye on hand)

3.) Chocolate chips

Let’s Get Started!

1.) Make your “pencil tips” on your wafer cookies. Choose one side of the wafer cookie and use a knife to cut two times diagonally leaving a small flat part for your “pencil lead” (your chocolate chip) to go.

2.) Melt your vanilla flavored chocolate in a double burner. You will NOT add the food coloring at this point; you want it white for the pencil tip. While the chocolate is melting, line a cookie sheet with parchment paper or tin foil.

3.) Dip the tip of your wafer cookie into the white chocolate and place on the lined baking sheet. If the consistency of your chocolate is too thick and doesn’t coat evenly you may add a bit of canola or vegetable oil to the chocolate. This will make it slightly more glossy and may be a bit easier to work with. Be careful not to over do it though. You can always add more oil if necessary but you can’t subtract! Now you’ll want to add your chocolate chip to make the lead on the pencil! Place in the fridge for about 5-10 minutes to allow the chocolate to set.

4.) Now you’ll want to add your pink food coloring or just a small tab of red to turn that white colored chocolate into pink! This will be your pencil eraser!

5.) Remove the wafer cookies from the fridge and dip the other flat side into the pink chocolate. Place back on lined baking sheet and put back into the fridge for another 5-10 minutes. When it is time to remove from the fridge, there may be excess chocolate that melted and dripped a little. If that happens just trim the excess pieces with a knife to get the perfect shape.

That is it, now you are done! It’s time to enjoy your tasty back to school wafer cookie pencils!
